Gluten-free oatmeal Dutch mini pancakes with banana
One of Sophie’s favorite breakfast recipes. Dutch mini pancakes with banana. This delicious recipe is therefore regularly on our breakfast table on Sunday mornings. Delicious with fresh strawberries. But also with blueberries or raspberries. Or with a large dot of curd cheese. These gluten-free pancakes also taste delicious with agave syrup. Or how about homemade lemon curd?! Mmm. But a simple pouring syrup also works fine. That tastes really good also. Sophie prefers to eat them with some icing sugar and a lump of lactose-free butter. Also very tasty!
Full of fiber and gluten free
The oatmeal also gives our little lady the much-needed fiber. That is of course very important for a growing child. That’s why I often give the Dutch mini pancakes to school the other day in her lunch box. They are also fine to eat when cold.
In this oatmeal pancakes recipe I use a blender to grind all ingredients into the batter. If you don’t have a blender, you can also grind the oatmeal in the food processor. The hand blender chopper is also a good option. Then put all ingredients in a batter bowl. Then mix into a smooth batter with the whisks of the hand mixer.

Havermout poffertjes met banaan

- poffertjes pan
Ingrediënten
- 225 gram havermout met glutenvrij logo
- 75 gram amandelmeel
- 375 ml lactosevrije melk
- 3 eieren
- 1½ theelepel bakpoeder
- 1½ banaan
- 3 eetlepels honing
- 1 theelepel vanille extract
- zout
Hoe maak je het?
- Doe de havermout in de blender en maal deze tot fijn havermeel.
- Voeg vervolgens de banaan, het amandelmeel, de eieren, de melk, de honing, het vanille-extract, het bakpoeder en een snufje zout toe.
- Mix alles op de hoogte stand in de blender tot een glad beslag.
- Schenk het beslag in een wegwerpspuitzak of speciale beslagfles.
- Laat het poffertjesijzer goed warm worden op de kookplaat. Vet de rondjes in met een bakkwast met wat olie of boter.
- Vul de rondjes met behulp van de spuitzak of fles.
- Laat het beslag stollen en draai de poffertjes daarna om met een vork.
- Herhaal totdat al het beslag op is.
